Citrix. Cake Trix (Juice a Cake)

I had access to a blood orange tree. Lots to harvest in the fall. I juiced 16 small blood oranges for this cake. It was beautiful and reminiscent of Trix cereal according to my sous chef. ('cept this had no artificial ingredients. Yay!) Read on for more tricks. ;)

But you don't have to use hand-picked outside-of-your-door blood oranges. Trick: this recipe can be adapted to orange or lemon cake. Vitamin C it as you will. And you can eat the fruit after juicing for more fiber. (Plus, cleaning is pretty fresh and dreamy.) That citrus versatility.

I present, the Citrix cake recipe!

1 1/2 cup flour

1 tsp bakin' soda

1/4 tsp bakin' powda

1/4 up to 1/2 cup brown sugar, or any sweetener. (I like to halve sugar in recipes)

1/8 tsp (dash) salt

1/3 cup veg./neutral oil

1 cup juice

2 tbsp zest

1 tbsp white vinegar

1 tsp vanilla extract

Icing to mix

3/4 to 1 cup powdered-sugar*

3 tbsp juice

Preheat oven to 375F. Oil a cake pan or loaf tray. Mix wet ingredients. Mix dry. Mix together. Pour in pan and bake 27-30 minutes. For cupcakes, check it at 16-18 minutes.

*trick! If you just have sugar, blend it and it will be powdery!
